With Guido as your guide, you will prepare an entire Italian feast starting with appetizers, then moving on to a pasta dish, meat dish and ending with a gorgeous dessert. Guido is equally at ease with the quite different Neapolitan and Roman schools of cookery, having been born into one and lived in the other for 20 years. His personal points of pride rest on fresh pasta, his own varieties of pizzas, his various breads, and ‘classical' Neapolitan desserts: babà , pastiera and others. The keynotes of his work are freshness, lightness and purity that result in vivid, unforgettable flavors. After Guido's entertaining and informative class you will all sit down to dine together and enjoy your creations along with a glass of wine. Chef Guido's Profile Born in Naples, Guido became enthralled with cooking at a young age while watching his parents, two excellent amateur cooks, create delicious traditional Neapolitan dishes. As a young man, Guido worked as a master of ceremonies in fine resort hotels and holiday villages where, among many other things, he taught long-range archery, professionally played the trumpet and sang popular Neapolitan lyrics. But he always felt his true calling was traditional Neapolitan cuisine and he continued to delight family and friends with his masterpieces in the kitchen. After ten years trying his luck in the business world, he decided to finally fulfill his dream of becoming a professional chef. He earned his diploma from the professional school A Tavola Con Lo Chef, an institution recognized for excellence by the Latium Regional Cooks' Union, and by the Federation of Italian Cooks. Since then he has accumulated experience and a loyal following in the critical, hard-to-please culinary circuits of the Trastevere district of Rome, where he has lived for the past 20 years.   What's Included in Your Cooking Class in Rome with Chef Guido Hands-on cooking lesson with Guido at his apartment in the Rome suburbs (approx. 4 hours).
